Pulled live from the tank and split open at the table, this is lobster at its most unadorned.

Wild-caught Atlantic Lobster, 1,000–1,200 g.
Chosen live from the tank, weighed in front of you.
Steamed whole, shell on, nothing masked.
Sweet, firm meat, still steaming at the table.

We keep it simple on purpose: the lobster goes into the pot whole, comes out just set, and reaches you with the shell still hot and the meat springy rather than soft. At this size there is enough tail, claw and knuckle to share, or enough to keep for yourself. Ask the kitchen to crack it if you would rather not work for it.
