THE CELLAR · CHAMPAGNE
Telmont Brut
฿990 glass · ฿6,300 bottle

Telmont farms its own vineyards in the Champagne region, and the house style leans dry, precise and mineral rather than rich. The Brut is the flagship — a non-vintage blend built on the three Champagne grapes, with the acidity kept high and the dosage kept low.
Champagne, France — the only region allowed to use the name.
12.5% ABV, dry, light-bodied.
High acidity, low tannin.
750ml bottle.
Green apple, brioche, citrus, almond.
How it is made
Champagne is made by the méthode traditionnelle: the wine undergoes a second fermentation inside the bottle, where the carbon dioxide has nowhere to go and dissolves into the wine. It then rests on its lees — the spent yeast — for a period set by the appellation. That lees contact is where the brioche and almond notes come from. The chalk soils of Champagne push the other way, into citrus and a saline, chalky edge.
How it tastes
Green apple and citrus up front, then brioche and almond from the lees ageing, and a chalky mineral line running underneath. The acidity is high and the body light, so it stays taut rather than creamy. Dry, with no sweetness to soften the finish.
Good to know
Champagne is the only appellation in the world that regulates how long a non-vintage wine must rest on its lees — fifteen months minimum, three years for vintage. The chalk beneath the region is the same seam that runs under the White Cliffs of Dover, which is why the comparison gets made so often.
