Paloma
฿460
The Paloma is the most drunk cocktail in Mexico and the least fussed over — tequila, grapefruit, lime, salt, built tall over ice. The Consul's version keeps that plainness and sharpens it: Olmeca Altos Plata, a highland tequila from 100% blue agave, goes in with fresh lime and pink grapefruit juice, and pomelo bitters do the work that a pinch of salt usually does, pulling the grapefruit forward and holding the sweetness back.
Olmeca Altos Plata — 100% blue agave tequila.
Pomelo bitters in place of the usual salt pinch.
Built, not shaken — soda added last.
Off-dry, low bitterness, 10% ABV.
How it is made
Everything goes into the glass in order and gets a brief stir, so the carbonation survives and the drink stays bright rather than foamy. The bitters are the only departure from the standard build — a grapefruit-forward aromatic that adds a bitter edge the juice alone can't carry.
How it tastes
Grapefruit first, in two registers: the soft sweetness of the juice and the drier, pithy grip of the bitters behind it. Lime keeps it taut. The agave sits underneath rather than on top — cooked and slightly vegetal, the flavour of the plant rather than the barrel. It finishes dry and clean, which is the whole point of the style.
Good to know
The Paloma predates most of the tequila drinks now better known outside Mexico, and it is still the one Mexicans actually drink — usually with Squirt or Jarritos grapefruit soda, poured straight into the glass. The name means "dove".
